  • 1-2 tbsp sriracha to taste
  • 1 tbsp honey or maple syrup
  • 1 tbsp lime juice fresh

Step‑by‑Step Instructions
  1. Begin by cutting fresh, skinless salmon fillets into 1-inch cubes. Pat each piece dry with a paper towel.
  2. Prepare three bowls: flour in the first, beaten eggs in the second, and panko mixture in the third.
  3. Coat each salmon cube in flour, dip into beaten eggs, then press into the panko mixture.
  4. Heat about 1 inch of vegetable oil in a skillet over medium heat. Test with a piece of bread for readiness.
  5. Fry the breaded salmon cubes in batches for 2-3 minutes on each side until golden brown and crispy.
  6. Whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a mixing bowl.
  7. Serve the fried salmon bites drizzled with bang bang sauce or on the side for dipping.
