  • 1 cup Black Beans rinsed

  • 0.5 cup Red Onion sliced
  • 1 Jalapeno Jalapeno adjust to taste
  • 1 cup Vegan Mozzarella or dairy-free cheese
  • 0.5 cup Cilantro or parsley

Method
 

Step-by-Step Instructions for Cauliflower Black Bean Nachos
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the cauliflower into bite-sized florets and combine it with avocado oil, nutritional yeast, chili powder, garlic powder, onion powder, cumin, and sea salt in a large mixing bowl.
  3. Spread the seasoned cauliflower evenly on the baking sheet and bake for about 20 minutes, or until golden and crispy.
  4. Once baked, group the florets together and top with black beans, diced tomatoes, red onion, jalapeño, and vegan mozzarella.
  5. Return to the oven and bake for another 5 minutes until the cheese is melted and bubbly.
  6. Sprinkle fresh cilantro on top before serving. Enjoy hot with your favorite dips.
