  • 1 tsp Paprika
  • 1/2 tsp Cayenne Pepper Adjust for desired spiciness
  • 1 tsp Five Spice Powder
  • 1 cup Cold Sparkling Water Adjust for desired batter thickness
Frying and Garnishing Ingredients
  • 2-3 cups Neutral Oil Vegetable or canola oil recommended
  • 1 tsp Salt For seasoning before serving
  • 2 tbsp Furikake For garnishing

Preparation Steps
  1. Prepare the Enoki Mushrooms: Slice off the dirt ends, separate into clusters, and cut into 1/4 inch layers.
  2. Heat the Oil: Fill a pot with neutral oil about 2-3 inches deep and heat to 375°F (190°C).
  3. Make the Batter: Combine potato starch, flour, baking powder, salt, white pepper, garlic powder, paprika, and cayenne pepper in a bowl; whisk in cold sparkling water until smooth.
  4. Dredge the Mushrooms: Dip each cluster in the batter, allowing excess to drip off.
  5. Fry: Add the battered mushrooms in small batches to the hot oil and fry until golden brown, about 1-2 minutes.
  6. Serve: Sprinkle with salt and furikake, then serve immediately with your chosen dipping sauces.
