  • 4 pieces bone-in, skin-on chicken thighs Ideal for roasting

For the Marinade
  • 2 tablespoons freshly squeezed lemon juice Use fresh when possible
  • 4 cloves garlic Minced, fresh is best
  • 1 tablespoon fresh rosemary Chopped, or 1 tsp dried
  • 1 tablespoon fresh thyme Chopped, or 1 tsp dried
For the Medley
  • 1 cup cherry tomatoes Halved
  • 1/2 cup Kalamata olives Pitted

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a bowl, combine chicken thighs, olive oil, garlic, lemon juice, rosemary, thyme, salt, and pepper. Toss to coat.
  4. Place the marinated chicken thighs skin-side up in a baking dish.
  5. Add halved cherry tomatoes and pitted Kalamata olives around the chicken.
  6. Roast in the oven for about 35 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for about 5 minutes before serving.
  8. Serve hot with the roasted tomatoes and olives.
