Preparation Steps
- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- In a bowl, combine chicken thighs, olive oil, garlic, lemon juice, rosemary, thyme, salt, and pepper. Toss to coat.
- Place the marinated chicken thighs skin-side up in a baking dish.
- Add halved cherry tomatoes and pitted Kalamata olives around the chicken.
- Roast in the oven for about 35 minutes or until the internal temperature reaches 165°F (74°C).
