Yogurt Dip Preparation
- Combine Greek yogurt with fresh dill and lemon juice in a mixing bowl. Stir until well mixed and refrigerate for 30 minutes.
Fritter Preparation
- Grate the zucchinis and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
- Squeeze out excess liquid from the grated zucchini using a clean towel or cheesecloth.
- In a bowl, combine drained zucchini, eggs, green onions, onion, spearmint, dill, pepper, feta, and flour until combined.
- Heat oil in a frying pan until it reaches 170°C / 340°F.
- Drop spoonfuls of the batter into hot oil and fry for 3-4 minutes on each side until golden brown.
- Drain fritters on paper towels and serve warm with yogurt dip.
