- Combine the sweet corn, jalapeños, flour, baking powder, and salt in a large mixing bowl. Add the egg and mix until just combined.
- Heat oil in a frying pan over medium heat until it's about half an inch deep. Check if ready by dropping a small spoonful of batter into the oil.
- Scoop out the batter with a tablespoon and drop into the hot oil, leaving space between each fritter. Fry for about 3-4 minutes until golden brown.
- Flip the fritters gently with a slotted spatula and continue frying for another 3-4 minutes until both sides are crispy.
