  • 1 large egg room temperature
  • 1 teaspoon baking powder fresh

  • 2 cups oil vegetable or canola for frying

Method
 

Step-by-Step Instructions
  1. Combine the sweet corn, jalapeños, flour, baking powder, and salt in a large mixing bowl. Add the egg and mix until just combined.
  2. Heat oil in a frying pan over medium heat until it's about half an inch deep. Check if ready by dropping a small spoonful of batter into the oil.
  3. Scoop out the batter with a tablespoon and drop into the hot oil, leaving space between each fritter. Fry for about 3-4 minutes until golden brown.
  4. Flip the fritters gently with a slotted spatula and continue frying for another 3-4 minutes until both sides are crispy.
  5. Remove the fritters using a slotted spoon and place on a paper towel-lined plate to drain excess oil.
  6. Serve warm with your favorite dipping sauce.
