Ingredients
  

For the Filling
  • 4 large starchy potatoes Russet or Idaho preferred
  • 1 bunch cilantro or parsley
  • 1 cup carrots fresh or frozen
  • 1 cup sweet peas fresh or frozen
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil or any cooking oil
For Seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garam masala adjust to taste
  • 1 teaspoon hot curry powder optional
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder adjust to taste
  • 1 teaspoon ground ginger
  • 1 whole jalapeno optional
  • 1 tablespoon fresh lemon juice juice from half a lemon
For the Pastry
  • 1 package spring roll pastry or Goya discs
  • 1 cup all-purpose flour

Method
 

Preparation Steps
  1. Boil the potatoes: Peel and cube potatoes, boil in salted water until tender, about 15-20 minutes.
  2. Sauté the aromatics: Heat olive oil, sauté onion for 5-7 minutes, add garlic and optional jalapeno, cook 1 more minute.
  3. Prepare the filling: Mash potatoes, mix with sautéed onion, garlic, cilantro, lemon juice, and spices, adjust seasoning.
  4. Fill the pastry: Lay out pastry sheets, place filling in center, fold and seal edges with flour-water paste.
  5. Cook the samosas: Fry in hot oil until golden brown or bake at 375°F for 20-25 minutes.
  6. Serve and enjoy: Drain excess oil, serve warm with chutney or dip.
