  • 1/4 cup Fresh Parsley Chopped
  • 4 sprays Olive Oil Spray For cooking

Method
 

Step-by-Step Instructions
  1. Start by grating the zucchini using a box grater. Sprinkle with salt and let it drain in a colander for about 10 minutes.
  2. While the zucchini is draining, preheat your air fryer to 200°C (390°F) for approximately 3 minutes.
  3. In a mixing bowl, combine the drained zucchini with the eggs, chickpea flour, Parmesan cheese (if using), minced garlic, black pepper, onion powder, and fresh parsley. Stir until it forms a thick batter.
  4. Lightly spray the air fryer basket with olive oil. Scoop heaped tablespoons of the batter and flatten them into patties. Place them in the air fryer basket, keeping space between each fritter. Spray the tops lightly with olive oil, then air fry for 10-12 minutes until golden brown.
  5. Once cooked, remove the fritters from the air fryer and let them rest for about 2 minutes before serving.
