Ingredients
  

For the Fritters
  • 2 cups Zucchini, grated and drained
  • 1 teaspoon Salt
  • 2 Eggs
  • 1 cup Chickpea Flour Can substitute with oat flour
  • 1/2 cup Parmesan Cheese Can substitute with nutritional yeast
  • 2 cloves Garlic, minced
  • 1 teaspoon Black Pepper
  • 1 teaspoon Onion Powder
  • 1/4 cup Fresh Parsley, chopped Can substitute with dill
For the Dip (Optional)
  • 1 cup Greek Yogurt Plain yogurt works too
  • 1 tablespoon Lemon Juice

Method
 

Preparation Steps
  1. Grate the zucchini, sprinkle with salt, and let it sit for 10 minutes to draw out moisture. Squeeze to remove excess liquid.
  2. Preheat the air fryer to 200°C (390°F) for about 3 minutes.
  3. In a bowl, mix the drained zucchini with eggs, chickpea flour, Parmesan, garlic, black pepper, onion powder, and parsley until combined.
  4. Lightly spray the air fryer basket with olive oil. Scoop and flatten the batter into patties, leaving space for cooking.
  5. Air fry the fritters for 10-12 minutes, checking halfway through.
  6. Flip the fritters and cook for an additional 8 minutes until golden brown.
  7. Let the fritters rest for 2 minutes before serving.
