For the Fritters
  • 2 medium Zucchini Grated and drained
  • 1 teaspoon Salt Essential for seasoning
  • 2 large Eggs Provides protein
  • 1 cup Chickpea Flour High protein alternative
  • 1/4 cup Parmesan Adds savory richness
  • 2 cloves Garlic Minced
  • 1/2 teaspoon Black Pepper Season to taste
  • 1/2 teaspoon Onion Powder Adds depth to flavor
  • 1/4 cup Fresh Parsley Chopped
  • cooking spray Olive Oil Spray For air frying

Method
 

Cooking Instructions
  1. Grate the zucchini, sprinkle with salt, and let drain for 10 minutes.
  2. Preheat your air fryer to 200°C (390°F) for about 3 minutes.
  3. In a bowl, combine the drained zucchini with eggs, chickpea flour, Parmesan, minced garlic, black pepper, onion powder, and parsley.
  4. Lightly spray the air fryer basket with olive oil.
  5. Form patties from the batter and place them in the air fryer basket, leaving space in between.
  6. Cook at 200°C (390°F) for 10 to 12 minutes, flipping halfway.
  7. Let cool for 2 minutes before serving.

Notes
