  • 2 cups Celery thinly sliced
  • 2 cups Green Apples (Granny Smith) cored and diced
  • 1 large English Cucumber sliced into half-moons
  • 1 tablespoon Dill fresh, chopped
  • 1 small Red Onion finely chopped
For the Dressing
  • 3 tablespoons Olive Oil extra virgin
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Lemon Zest
  • 1/2 teaspoon Salt
  • 1 teaspoon Sugar
  • 1/4 teaspoon Black Pepper freshly cracked

Method
 

Preparation
  1. Wash and dry all fresh ingredients. Thinly slice the celery, core and dice the green apples, and cut the cucumber into half-moons. Finely chop the red onion and dill.
  2. In a medium bowl, combine lemon juice and zest, then add the olive oil. Whisk in salt, sugar, and black pepper until well combined.
  3. In a large salad bowl, combine the celery, cucumber, green apples, red onion, and dill. Pour the dressing over the salad and toss gently.
  4. Let the salad rest for about 10-15 minutes at room temperature.
  5. Serve the salad chilled or at room temperature.
