  • 1 can Whole Kernel Corn Drained before use
  • 1 Red Bell Pepper Diced, can substitute with yellow or green
  • 1 cup Shredded Mexican Blend Cheese Alternatives include cheddar or Monterey Jack
  • ½ cup Mayonnaise Light mayo or Greek yogurt can be used
  • Black Pepper Adjust to taste
  • 2 cups Crushed Chili Cheese Fritos Use plain Fritos if preferred
  • Fresh Cilantro Optional garnish

Method
 

Preparation Steps
  1. In a large bowl, combine the drained whole kernel corn, diced red bell pepper, and shredded Mexican blend cheese. Add mayonnaise and black pepper, stirring well until coated.
  2. Cover the bowl and refrigerate for 30 minutes to allow the flavors to meld.
  3. Just before serving, gently fold in the crushed Chili Cheese Fritos to maintain crunch.
  4. Optionally, sprinkle chopped fresh cilantro over the salad and serve immediately.

Notes
