  • 2 whole English Cucumbers Diced
  • 1 teaspoon Salt For drawing out moisture
  • 1 cup Yogurt Creamy binder
  • 1/2 cup Feta Cheese Crumbled
  • 1/4 cup Fresh Herbs Chopped, to taste
  • 1 tablespoon Lemon Zest For brightness
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 1/4 teaspoon Black Pepper To taste
For Assembly
  • 8 slices Bread Toasted to golden perfection
  • 1 cup Sprouts For added crunch
  • 1/2 small Onion Thinly sliced

Method
 

Instructions
  1. Dice the English cucumbers and sprinkle with salt. Let them sit in a colander for 10 minutes.
  2. Mix yogurt, feta cheese, fresh herbs, lemon zest, lemon juice, and black pepper in a bowl.
  3. Drain and pat dry the cucumbers. Fold them into the yogurt mixture.
  4. Toast the bread until golden brown, about 3-5 minutes, and cool completely.
  5. Assemble the sandwiches with cucumber filling, sprouts, and onion between slices of bread.
  6. Cut the sandwiches in half and serve immediately to maintain freshness.
