- Wash and peel the cucumbers. Slice them thinly, about 1/4 inch thick, and place them in a large mixing bowl. Sprinkle with salt and let sit for 15-20 minutes.
- Transfer the cucumbers to a colander over the sink. Gently squeeze to eliminate excess liquid. Return to the mixing bowl.
- In a small bowl, combine white wine vinegar, olive oil, sugar, and black pepper. Whisk until sugar is dissolved.
- Pour the dressing over the drained cucumbers. Add red onion and dill if desired. Toss gently to coat.
