  • 1 cup Coconut Milk Substitute with almond or unsweetened plant milk.
  • 1 teaspoon Dried Thyme Other dried herbs like oregano or basil can be used.
  • 1 teaspoon Paprika Adjust taste with cayenne for heat.
  • Salt Adjust to taste.
  • Pepper Adjust to taste.
For the Topping
  • 1 package Frozen Tater Tots (Gluten-Free) Ensure they are labeled gluten-free.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, heat over medium heat and add your choice of ground turkey or beef. Cook for about 5-7 minutes, breaking it up with a spatula, until it’s browned.
  3. Add chopped onion and minced garlic, sauté for 3-4 minutes until translucent and fragrant.
  4. Stir in the chopped red bell pepper, frozen corn, and mixed vegetables. Pour in the coconut milk, thyme, paprika, salt, and pepper. Cook for an additional 5-7 minutes.
  5. Spread the filling evenly into a 9x13 inch baking dish.
  6. Place the frozen tater tots in a single layer over the filling.
  7. Bake the casserole for 25-30 minutes until the tater tots are golden brown and crispy.
  8. Let the casserole cool for a few minutes before serving.
