Preparation
- Preheat your oven to 425°F (220°C).
- In a large skillet, heat over medium heat and add your choice of ground turkey or beef. Cook for about 5-7 minutes, breaking it up with a spatula, until it’s browned.
- Add chopped onion and minced garlic, sauté for 3-4 minutes until translucent and fragrant.
- Stir in the chopped red bell pepper, frozen corn, and mixed vegetables. Pour in the coconut milk, thyme, paprika, salt, and pepper. Cook for an additional 5-7 minutes.
- Spread the filling evenly into a 9x13 inch baking dish.
- Place the frozen tater tots in a single layer over the filling.
- Bake the casserole for 25-30 minutes until the tater tots are golden brown and crispy.
- Let the casserole cool for a few minutes before serving.
