  1. Prepare the brown butter by melting 1 cup of unsalted butter in a saucepan over medium heat. Stir until golden brown and nutty, about 5-7 minutes.
  2. Preheat the oven to 350°F (175°C) and grease a loaf pan. In a bowl, combine the cooled brown butter and 1 cup of sugar, beating until silky. Add 2 room temperature eggs, 1 teaspoon vanilla extract, and 2-3 mashed bananas; mix until creamy.
  3. In a separate bowl, whisk together 2 cups flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon.
  4. Gently fold the dry ingredients into the wet mixture using a rubber spatula, mixing until just combined.
  5. Prepare the sugar cookie crumble by mixing 1/2 cup sugar, 1/4 cup melted brown butter, 1 cup flour, 1/2 teaspoon vanilla extract, and a pinch of salt in a bowl.
