  1. Begin by heating a skillet over medium heat. Add 4 tablespoons of pine nuts to the dry skillet, toasting them for about 2-3 minutes or until golden brown and fragrant. Remove from heat and cool.
  2. In a mason jar, combine ¼ cup of olive oil, 2 tablespoons of balsamic vinegar, and 1 crushed garlic clove. Add 2 tablespoons of maple syrup, ½ teaspoon of dried thyme, and season with salt and pepper. Shake vigorously until emulsified.
