- Using a mandolin or sharp knife, thinly slice the English cucumber into uniform rounds, about 1/8 inch thick. Place in a bowl with a sprinkle of kosher salt.
- In the bowl with the cucumber, add the imitation crab meat, chopped green onions, soy sauce, and spicy mayo. Toss in freshly cracked pepper.
- Secure the lid on the bowl and shake gently for about 30 seconds to combine all ingredients.
- Slice the avocado into thin wedges and arrange them on top of the salad mixture. Drizzle more spicy mayo and sprinkle sesame seeds or pickled ginger.
