Step-by-Step Instructions
  1. Warm cooked chicken breasts in the microwave or stovetop over medium heat for 2-3 minutes until heated through. Slice or shred and season with salt and pepper.
  2. Lay out slices of bread and spread basil pesto on each, and add mayonnaise to one side if desired.
  3. Layer warmed chicken, cheese, and any optional add-ins on one slice of bread.
  4. Heat a skillet over medium heat with butter or olive oil. Grill the sandwich for 3-4 minutes until golden brown, then flip and toast the other side for another 3-4 minutes.
  5. Remove from skillet, cool slightly, slice diagonally, and serve.
