Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and cube sweet potatoes into bite-sized pieces. Toss with olive oil and spices until coated.
  3. Spread sweet potatoes on the baking sheet and roast for 20-25 minutes, flipping halfway through.
  4. Heat olive oil in a skillet. Season chicken with spices and lime juice, then cook for 4-6 minutes per side.
  5. In a pot, heat rice with a splash of water or broth on low until warmed through, about 5-7 minutes.
  6. Assemble bowls with rice as the base, followed by sweet potatoes, chicken, and desired toppings.
