  • 1 teaspoon Garlic Powder Fresh garlic can be substituted
  • 1 teaspoon Onion Powder Optional
  • 1 tablespoon Lemon Zest Can substitute with lime
  • 2 tablespoons Lemon Juice Can substitute with lime
  • 3 tablespoons Extra-Virgin Olive Oil Can substitute with avocado oil
  • 1 tablespoon Fresh Rosemary Dried rosemary can be used but in lesser quantity
  • 1 tablespoon Fresh Parsley Optional for garnish

Method
 

Preparation
  1. Wash and scrub the potatoes, then cut them into wedges. Boil them in salted water for about 10 minutes until tender but firm. Drain and cool.
  2. Preheat the grill to medium-high heat (around 400°F) and oil the grates lightly to prevent sticking.
  3. In a mixing bowl, combine garlic powder, onion powder, lemon zest and juice, olive oil, rosemary, salt, and black pepper to create the marinade.
  4. Toss the cooled potato wedges in the marinade until evenly coated. Let them soak in the flavors for a few minutes.
  5. Place the marinated potatoes on the grill, cooking for 7-10 minutes per side until golden brown and crispy.
  6. Remove from grill and toss with remaining marinade and parsley before serving.
