- Preheat your Blackstone griddle to medium heat (350°F to 375°F) for about 5 minutes.
- Season salmon fillets on all sides with salt and pepper. Set aside.
- Cut lemon in half; set one half aside for juicing and slice the other half into 1/8-inch thick pieces.
- Pour a thin layer of high smoke point oil onto the preheated griddle.
- Char the halved lemon and slices on the griddle for about 1 minute until fragrant.
- Place seasoned salmon fillets skin-side up on the griddle and cook for approximately 5 minutes.
- Flip the salmon fillets skin-side down and squeeze juice from the charred lemon half over them.
- Layer charred lemon slices atop the salmon and cook for an additional 7 to 10 minutes, monitoring internal temperature to reach 145°F.
