  • 1 can Cream of Mushroom Soup or homemade
  • 1 can Diced Tomatoes or canned with herbs
  • 1 tbsp Paprika smoked paprika for a twist
  • 1 tbsp Dried Oregano can substitute with Italian seasoning
  • to taste Salt
  • to taste Pepper
  • 2 cups Shredded Cheddar Cheese can substitute mozzarella
  • 1 cup Frozen Peas or Mixed Vegetables optional

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium-high heat for about 5-7 minutes.
  3. Add chopped onion and minced garlic; sauté for 3-5 minutes until translucent.
  4. Remove from heat and stir in rice, broth, soup, tomatoes, paprika, oregano, salt, and pepper. Mix until combined.
  5. Transfer mixture to a greased 9x13 inch baking dish, cover with foil, and bake for 45-55 minutes.
  6. Remove foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 5-10 minutes.
  7. Let the casserole sit for 5 minutes before serving.
