- In a large mixing bowl, combine 2 cups of full-fat Greek yogurt, 1/2 cup of powdered peanut butter, 1/4 cup of creamy peanut butter, and 1/4 cup of maple syrup. Blend until smooth.
- Line a baking tray with parchment paper. Using a medium cookie scoop, portion out the yogurt mixture onto the tray, spacing each scoop about an inch apart.
- Place the tray in the freezer for 10 to 20 minutes or until the bites are solid.
- In a microwave-safe bowl, combine 1 cup of chocolate chips with 1 tablespoon of coconut oil. Heat in 30-second intervals until fully melted.
- Remove the frozen yogurt bites from the freezer and dip each bite into the melted chocolate using a fork.
- Place the coated bites back on the parchment-lined tray. Sprinkle with flaky sea salt if desired.
- Transfer the tray back to the freezer for about 30 minutes until the chocolate sets.
- Store any leftovers in an airtight container in the fridge for 3-4 days or in the freezer for up to 3 months.
