Step-by-Step Instructions
  1. Start by washing, peeling, and finely chopping the carrots until they resemble small bits. Place the chopped carrots into a food processor and pulse until they’re finely minced.
  2. In the same food processor, add your choice of nuts, rolled oats, and optional unsweetened desiccated coconut. Pulse the mixture until it develops a flour-like consistency, about 30 seconds.
  3. Introduce the chopped carrots back into the food processor along with almond butter, vanilla extract, and your Medjool dates (pitted). Blend until the mixture is sticky and well combined, about 1-2 minutes.
  4. Use a small cookie scoop or your hands to take portions of the dough and roll them into golf ball-sized spheres. If desired, roll in additional desiccated coconut.
  5. After rolling, place the energy balls on a parchment-lined tray and refrigerate for about 15 minutes to firm up slightly.
