- Start by washing, peeling, and finely chopping the carrots until they resemble small bits. Place the chopped carrots into a food processor and pulse until they’re finely minced.
- In the same food processor, add your choice of nuts, rolled oats, and optional unsweetened desiccated coconut. Pulse the mixture until it develops a flour-like consistency, about 30 seconds.
- Introduce the chopped carrots back into the food processor along with almond butter, vanilla extract, and your Medjool dates (pitted). Blend until the mixture is sticky and well combined, about 1-2 minutes.
- Use a small cookie scoop or your hands to take portions of the dough and roll them into golf ball-sized spheres. If desired, roll in additional desiccated coconut.
- After rolling, place the energy balls on a parchment-lined tray and refrigerate for about 15 minutes to firm up slightly.
