Croutons
  • 2 slices Italian/French/Ciabatta Bread Gluten-free options available.
  • 2 tablespoons Olive Oil Avocado oil is a great alternative.
  • 1/2 teaspoon Garlic Powder Add a pinch of coarse salt and Parmesan for flavor.
Salad
  • 1 head Romaine Lettuce Add other greens for variety.
  • Shredded/Grated Parmesan Cheese Feta cheese can be used for variation.

Method
 

Dressing Preparation
  1. In a medium bowl, combine the mayo, Worcestershire sauce, Dijon mustard, and lemon juice. Add grated Parmesan cheese, minced garlic cloves, and season with salt and pepper. Mix until smooth. Cover and refrigerate for 30 minutes.
Crouton Making
  1. Preheat your oven to 400°F (200°C). Cut the bread into cubes, toss with olive oil, garlic powder, and a pinch of salt and Parmesan. Spread on a baking sheet and bake for 6-8 minutes until golden brown.
Salad Preparation
  1. Wash and dry the romaine lettuce, tear into pieces, and place in a large bowl. Add the cooled croutons and the chilled dressing. Toss until well mixed.
Serving
  1. Transfer the salad to individual plates or serve family-style. Sprinkle with more cheese and serve with optional grilled chicken or shrimp.
