Step-by-Step Instructions for Parmesan Chicken Meatloaf
- Preheat the oven to 200°C (400°F) and prepare a baking sheet lined with foil.
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic for about 5 minutes until tender.
- In a large bowl, combine ground chicken, cooled onion-garlic mixture, seasoned breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Blend thoroughly.
- Shape two-thirds of the mixture into a rectangle, create a well in the center, and place mozzarella slices inside. Cover with remaining mixture.
- Spread marinara sauce over the meatloaf.
- Bake for approximately 45 minutes until cooked through and golden.
- Mix panko breadcrumbs, Parmesan, melted butter, and parsley in a bowl for topping.
- After 45 minutes, remove the meatloaf, add topping, and bake for another 15-20 minutes.
