Step-by-Step Instructions for Parmesan Chicken Meatloaf
  1. Preheat the oven to 200°C (400°F) and prepare a baking sheet lined with foil.
  2. Heat olive oil in a skillet over medium heat. Sauté onion and garlic for about 5 minutes until tender.
  3. In a large bowl, combine ground chicken, cooled onion-garlic mixture, seasoned breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Blend thoroughly.
  4. Shape two-thirds of the mixture into a rectangle, create a well in the center, and place mozzarella slices inside. Cover with remaining mixture.
  5. Spread marinara sauce over the meatloaf.
  6. Bake for approximately 45 minutes until cooked through and golden.
  7. Mix panko breadcrumbs, Parmesan, melted butter, and parsley in a bowl for topping.
  8. After 45 minutes, remove the meatloaf, add topping, and bake for another 15-20 minutes.
  9. Allow the meatloaf to rest for about 10 minutes before slicing.
