  • 8 oz Pasta Any type, gluten-free for a gluten-free version.
For the Pesto Sauce
  • 1 cup Pesto Sauce Use store-bought vegan pesto for convenience.
For the Vegetables
  • 2 cups Broccoli Fresh or frozen; avoid overcooking.
For the Protein
  • 1 can White Beans Canned for creaminess.
For Seasoning
  • 2 tbsp Olive Oil Adjust to taste.

Method
 

Cooking Steps
  1. Start by bringing a large pot of salted water to a rolling boil over high heat. Add your choice of pasta, cooking it according to the package instructions, usually around 8-12 minutes.
  2. In the last 3-4 minutes of cooking, gently add the chopped broccoli to the pot with the pasta.
  3. Once the pasta and broccoli are cooked, reserve a cup of the cooking water and drain the pasta and broccoli.
  4. In the same pot, add the drained pasta and broccoli along with the creamy white beans and your chosen pesto sauce. Mix everything gently.
  5. Gradually add the reserved pasta cooking water, stirring continuously until you reach your desired creaminess.
  6. Drizzle a touch of olive oil over your dish and season with salt and pepper to taste before serving.
