  • 8 oz pasta your favorite type
  • 2 cups fresh broccoli chopped into small florets
  • 1 cup onion diced
  • 4 slices bacon cooked and chopped, optional

  • 1 cup mayonnaise or Greek yogurt
  • 2 tbsp red wine vinegar or apple cider vinegar
  • 1 tbsp sugar adjust to taste

  • 1 tsp pepper freshly ground

Method
 

Cooking Steps
  1. Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and cool.
  2. Chop the fresh broccoli, onion, and bacon. Place all ingredients in a mixing bowl.
  3. In a separate bowl, mix mayonnaise, vinegar, sugar, salt, and pepper to create the dressing.
  4. Combine the dressing with the cooled pasta, broccoli, and onion. Mix gently to coat.
  5. Cover and chill in the refrigerator for at least 3 hours or overnight.
  6. Before serving, sprinkle bacon on top and stir again to combine.
