Method
 

Step-by-Step Instructions
  1. Heat a splash of olive oil in a skillet over medium heat. Sauté garlic until fragrant. Toss in spinach, cooking until wilted.
  2. Spread ricotta cheese on one side of each slice of bread. Sprinkle shredded mozzarella evenly over the ricotta.
  3. Sprinkle chopped sun-dried tomatoes over one slice and evenly distribute sautéed spinach on top.
  4. Place the second slice of bread on top, butter the outer sides of each slice.
  5. Grill the sandwich in a skillet over medium heat for about 3-4 minutes per side until golden brown and crispy.
  6. Let the sandwich rest for 1 minute, then slice it in half and serve warm.
