Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or non-stick spray.
  2. In a medium mixing bowl, combine the chopped rhubarb, 1/2 cup of granulated sugar, 1/4 cup of flour, 1/4 teaspoon of salt, and 1/2 teaspoon of cinnamon. Toss until well coated.
  3. In a separate bowl, whisk together the whole milk, 3 eggs, the remaining 1/2 cup of sugar, and the vanilla extract until smooth.
  4. In another bowl, mix 1 cup of flour with 1/2 cup of melted butter until it resembles coarse crumbs. Press this into the bottom of the baking dish.
  5. Pour the rhubarb filling over the crust evenly, followed by the custard mixture.
  6. Bake for 40-45 minutes until the custard is set and lightly golden on top.
  7. Cool completely in the pan before slicing into squares.
  8. Dust with powdered sugar before serving.
