- In a medium bowl, blend together farmer's cheese (or cream cheese), egg, sugar, vanilla extract, and lemon zest until smooth.
- Wash and slice the strawberries, then toss them with sugar and flour in a large bowl.
- Roll out the pastry into a rough circle, about 12 inches in diameter.
- Spread the cheese mixture over the center of the pastry, leaving a 2-inch border; layer the strawberries on top.
