  • 1 cup shredded cheese sharp cheddar or Mexican blend
  • 1 cup diced bell peppers mix of red, green, and yellow
  • 1/2 cup shredded carrots can substitute with grated zucchini
  • 1/4 cup chopped green onions omit if desired
  • 1/2 cup chopped spinach thawed frozen spinach works
  • to taste seasonings garlic powder, onion powder, salt, pepper
  • 4 large tortillas burrito size, spinach or tomato optional

Method
 

Preparation Steps
  1. In a mixing bowl, combine cream cheese and sour cream or Greek yogurt until smooth.

  4. Spread the creamy vegetable mixture over a tortilla, maintaining a border, then roll tightly.

  6. Slice the chilled tortilla into 1-inch pinwheels and serve on a platter.
