Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare an 8x8-inch baking pan with parchment paper or cooking spray.
  2. Grate two medium zucchinis and mix with 1/2 teaspoon of salt. Let sit for 5-10 minutes, then drain and squeeze out excess moisture.
  3. In a bowl, whisk together three large eggs and 1/4 cup of yogurt until smooth. Add in seasonings and combine.
  4. Fold in the drained zucchini and 3/4 cup of mozzarella, mixing gently.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes until golden and firm.
  6. Allow to cool for 10 minutes before slicing into squares to serve.
