Method
 

Directions
  1. In a large mixing bowl, combine the lightly beaten eggs and salt, whisking until blended. Next, add the shredded zucchini, dried basil, shredded cheddar cheese, Bisquick, and grated onion. Mix the ingredients thoroughly until well combined.
  2. Use your hands to shape the mixture into 6 uniform patties, each about ½ inch thick, and place them on a parchment-lined plate.
  3. In a large skillet over medium-high heat, melt the butter until it’s bubbly and beginning to brown, about 2–3 minutes.
  4. Carefully place the zucchini patties in the hot skillet in a single layer, and fry each side for 4–5 minutes or until golden brown and crispy.
  5. Once cooked, transfer the crispy zucchini patties to a paper towel-lined plate to drain excess oil. Let them rest before serving.
