Ingredients
  

For the Salad
  • 1 head Romaine Lettuce substitute with iceberg if desired
  • 1 cup Cherry Tomatoes halved, or substitute with diced regular tomatoes
  • 1 medium Cucumber sliced, or substitute with bell peppers
  • 1 medium Carrot grated, or substitute with shredded cabbage
  • 1/2 medium Red Onion thinly sliced, or substitute with green onions
  • 1/2 cup Sharp Cheddar Cheese optional, or substitute with feta cheese
For the Vinaigrette
  • 1/2 cup Extra Virgin Olive Oil or substitute with avocado oil
  • 1/4 cup Red Wine Vinegar or substitute with apple cider vinegar
  • 1 tablespoon Dijon Mustard or substitute with honey mustard
  • 1 teaspoon Italian Seasoning or substitute with fresh basil or oregano
  • 1/2 teaspoon Garlic Powder or substitute with fresh minced garlic
  • to taste Salt & Pepper adjust to taste

Method
 

Preparation
  1. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, grated carrot, and thinly sliced red onion. Toss gently until mixed.
  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, Italian seasoning, garlic powder, salt, and pepper until smooth.
  3. Drizzle the vinaigrette over the salad mixture and gently toss to coat.
  4. Serve immediately with grated cheddar cheese on top if desired.
