  • 8 oz Fresh Strawberries hulled and diced
  • 1 tbsp Granulated Sugar optional for maceration
  • 1.75 cups All-Purpose Flour
  • 2 tbsp All-Purpose Flour for coating strawberries
  • 1 tsp Baking Powder
  • 0.5 tsp Baking Soda
  • 0.5 tsp Salt
  • 2 tbsp Brown Sugar optional, packed
  • 0.25 cup Unsalted Butter melted
  • 0.25 cup Vegetable or Canola Oil
  • 2 large Eggs at room temperature
  • 0.75 cup Buttermilk at room temperature
  • 1.5 tsp Vanilla Extract
For the Glaze
  • 1 cup Powdered Sugar
  • 1 tbsp Milk or Heavy Cream
  • 0.5 tsp Vanilla Extract for the glaze

Method
 

Preparing the Bread
  1. Hull and dice the strawberries, toss with sugar, and let sit for 10-15 minutes.
  2. Preheat oven to 350°F (175°C) and prepare the loaf pan.
  3. Whisk together flour, baking powder, baking soda, and salt in one bowl.
  4. In another bowl, mix sugars, butter, oil, eggs, buttermilk, and vanilla until smooth.
  5. Combine wet and dry ingredients gently, then fold in the macerated strawberries.
  6. Pour batter into the prepared pan and bake for 55-65 minutes.
  7. Cool in the pan for 15 minutes, then transfer to a wire rack.
Preparing the Glaze
  1. Whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle glaze over the cooled bread.
