Filling
  • 1 box Lemon pudding mix Opt for instant for quicker prep
  • 8 oz Cream cheese Softened to avoid lumps
  • 1 can Blueberry pie filling Can substitute with raspberry or strawberry filling
  • 8 oz Cool Whip Can use homemade whipped cream
Crust
  • 1 package Graham cracker crust Use gluten-free graham crackers for a gluten-free version

Method
 

Instructions
  1. Crush graham crackers into fine crumbs and press into the baking dish. Optionally bake at 350°F for 8-10 minutes or leave unbaked.
  2. Beat softened cream cheese until smooth, then mix in lemon pudding until well combined.
  3. Fold in Cool Whip gently and spread over the cooled graham cracker crust.
  4. Spread blueberry pie filling over the lemon mixture evenly.
  5. Cover and chill in the refrigerator for at least 2 hours, ideally 4 hours.
  6. Cut into squares and garnish with extra blueberries or lemon zest before serving.
