Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C). Spray two 8-inch round cake pans with non-stick spray and line bottoms with parchment paper.
  2. Mash about 1 cup of chopped strawberries in a zip-top bag and set aside.
  3. Mix white cake mix, vegetable oil, whole milk, and strawberry gelatin in a bowl; beat for 2 minutes. Add egg whites and vanilla; mix thoroughly, then fold in crushed strawberries.
  4. Pour batter into prepared pans and bake for 30-35 minutes until a toothpick comes out clean.
  5. Let cakes cool on a wire rack for about 10 minutes before inverting onto racks to cool completely.
Frosting Preparation
  1. Purée 1 cup of sliced strawberries and heat with lemon juice in a saucepan until thickened, about 5-7 minutes; cool.
  2. Beat cream cheese and butter until smooth. Gradually add powdered sugar; stir in cooled strawberry purée and milk until the desired consistency is achieved.
  3. Frost the cooled cake layers with frosting and decorate with additional fresh strawberries if desired.
