  1. Preheat your oven to 325°F (163°C) and coat a 9-inch springform pan with non-stick spray.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted unsalted butter. Press firmly into the bottom of the springform pan to form the crust.
  3. Beat softened cream cheese until creamy. Gradually mix in sugar, sour cream, vanilla extract, and salt. Add eggs one at a time, mixing briefly after each addition.
  4. Pour the cheesecake filling over the crust and bake for 60 to 70 minutes until edges are set but center jiggles slightly.
  5. Cool the cheesecake to room temperature on a wire rack for about an hour. Cover and chill for at least 8 hours or overnight.
  6. Decorate with blueberries in a star shape and arrange sliced strawberries around for a festive finish.
