- In a medium mixing bowl, combine the cottage cheese, eggs, vanilla extract, and sugar. Blend until smooth and creamy.
- Sprinkle the baking powder and flour into the wet mixture. Gently fold together until just combined.
- Preheat a non-stick skillet over medium heat. Add canola oil and heat until shimmering.
- Pour about 3 tablespoons of batter onto the skillet for each pancake. Cook for 3-4 minutes, then flip and cook an additional 3-4 minutes.
- Transfer cooked pancakes to a warm plate. Serve with syrup, fresh fruit, or jam.
