  • 1 teaspoon Baking Powder or baking soda if needed
  • 1 cup Flour substitute with gluten-free flour if needed

Cooking Steps
  1. In a medium mixing bowl, combine the cottage cheese, eggs, vanilla extract, and sugar. Blend until smooth and creamy.

  3. Preheat a non-stick skillet over medium heat. Add canola oil and heat until shimmering.
  4. Pour about 3 tablespoons of batter onto the skillet for each pancake. Cook for 3-4 minutes, then flip and cook an additional 3-4 minutes.
  5. Transfer cooked pancakes to a warm plate. Serve with syrup, fresh fruit, or jam.
