Step-by-Step Instructions

  2. Wash and trim the zucchini, slicing it into 3/4-inch thick pieces. Thread them onto skewers.
  3. In a small bowl, combine melted butter, minced garlic, olive oil, salt, and pepper. Let it sit to infuse.
  4. Generously coat the zucchini skewers with the garlic butter mixture and reserve some for basting.
  5. Place the skewers on the grill, grilling for 8-12 minutes, turning every 2-3 minutes.
  6. Brush the skewers with reserved garlic butter midway through cooking for extra flavor.
  7. Check for doneness; the zucchini should be lightly charred and tender when pierced.
  8. Remove from the grill, transfer to a platter, and squeeze fresh lemon juice over the top.
