- In a medium bowl, whisk together olive oil, lemon juice, minced garlic cloves, chopped cilantro and parsley, salt, black pepper, and cayenne pepper.
- Place shrimp into a separate bowl and pour in about ¾ of the marinade. Toss to coat and marinate for at least 30 minutes.
- Thread each shrimp onto skewers, leaving small gaps between pieces for even cooking.
- Preheat your grill to medium-high heat (about 375°F). Grill the shrimp skewers for 2-3 minutes on each side until pink and slightly charred.
- Remove skewers from the grill and drizzle with the remaining marinade. Serve immediately with lemon wedges.
