  • 2 cloves Garlic (minced) Fresh is best.
  • 2 tablespoons All-purpose flour Optional for thicker sauce.
  • 1 cup Chicken broth Vegetable broth works as a vegetarian alternative.
  • 0.5 cup Heavy cream Coconut cream makes a great dairy-free substitute.
  • 1 teaspoon Italian seasoning Can swap for fresh basil or oregano.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a large sheet pan with olive oil.
  2. Toss halved baby potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper, then arrange on one half of the sheet pan.
  3. Pat chicken dry, brush with melted butter, season with salt, pepper, onion powder, and smoked paprika, and place on the other half of the sheet pan.
  4. Roast for 25–30 minutes, flipping halfway through until chicken reaches 165°F and potatoes are golden.
  5. In a saucepan, melt butter, sauté garlic, add flour, chicken broth, and cream, stirring until thickened, then mix in Parmesan and Italian seasoning.
  6. Drizzle sauce over chicken and potatoes, garnish with extra Parmesan and parsley, and serve warm.
