- Prepare the crockpot by lightly greasing the interior with 1 tablespoon of olive oil.
- In a medium bowl, combine minced garlic, 2 tablespoons of olive oil, dried basil, oregano, rosemary, thyme, salt, and pepper. Whisk together until well blended.
- Rub the garlic-herb mixture generously over each piece of chicken thighs.
- Place the halved baby red potatoes in the bottom of the greased crockpot. Drizzle with remaining olive oil and season with salt and pepper.
- Position the seasoned chicken thighs on top of the potatoes in the crockpot.
- Sprinkle freshly grated Parmesan cheese evenly over the chicken and potatoes.
- Cover the crockpot and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
- Once cooking time is complete, lift chicken and potatoes from the crockpot using a slotted spoon.
- Sprinkle chopped fresh parsley over the chicken and potatoes before serving.
