Step‑by‑Step Instructions
  1. Prepare the crockpot by lightly greasing the interior with 1 tablespoon of olive oil.
  2. In a medium bowl, combine minced garlic, 2 tablespoons of olive oil, dried basil, oregano, rosemary, thyme, salt, and pepper. Whisk together until well blended.
  3. Rub the garlic-herb mixture generously over each piece of chicken thighs.
  4. Place the halved baby red potatoes in the bottom of the greased crockpot. Drizzle with remaining olive oil and season with salt and pepper.
  5. Position the seasoned chicken thighs on top of the potatoes in the crockpot.
  6. Sprinkle freshly grated Parmesan cheese evenly over the chicken and potatoes.
  7. Cover the crockpot and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  8. Once cooking time is complete, lift chicken and potatoes from the crockpot using a slotted spoon.
  9. Sprinkle chopped fresh parsley over the chicken and potatoes before serving.
