Step-by-Step Instructions for Gnocchi alla Sorrentina
  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat for about 1-2 minutes until it shimmers.
  3. Reduce the heat to low and add minced garlic to the heated oil, sauté for about 2 minutes.
  4. Pour in the 28 ounces of canned tomatoes, salt, and black pepper. Allow to simmer for 8-10 minutes.
  5. Stir in half of your cubed mozzarella and torn basil leaves, then gently fold in the 1 pound of fresh gnocchi.
  6. Sprinkle remaining mozzarella and half of the shredded Parmesan cheese over the gnocchi mixture.
  7. Transfer the skillet to the oven and bake for 15-20 minutes until the cheese is melted and bubbling.
  8. Remove from the oven, sprinkle additional Parmesan cheese and torn basil before serving.
