- Preheat your grill on high heat, reaching around 400°F (200°C).
- In a large mixing bowl, combine cubed potatoes, diced onion, sliced butter, olive oil, minced garlic, fresh parsley, salt, and pepper. Toss everything together until well coated.
- Take a large piece of aluminum foil and pour the potato mixture onto the center. Fold the foil around the ingredients to create a sealed packet.
- Carefully place the sealed foil packet on the preheated grill. Cook for 10 minutes on one side, then flip the packet and grill for another 10 minutes.
- After grilling for 20 minutes, carefully open the foil packet to add your cheese of choice on top of the potatoes. Reseal and grill for an additional 5 minutes.
- Once the cheese is melted and bubbly, carefully open the packet. Serve hot, garnished with extra parsley if desired.
