Method
 

Step-by-Step Instructions
  1. Preheat your grill on high heat, reaching around 400°F (200°C).
  2. In a large mixing bowl, combine cubed potatoes, diced onion, sliced butter, olive oil, minced garlic, fresh parsley, salt, and pepper. Toss everything together until well coated.
  3. Take a large piece of aluminum foil and pour the potato mixture onto the center. Fold the foil around the ingredients to create a sealed packet.
  4. Carefully place the sealed foil packet on the preheated grill. Cook for 10 minutes on one side, then flip the packet and grill for another 10 minutes.
  5. After grilling for 20 minutes, carefully open the foil packet to add your cheese of choice on top of the potatoes. Reseal and grill for an additional 5 minutes.
  6. Once the cheese is melted and bubbly, carefully open the packet. Serve hot, garnished with extra parsley if desired.
