- In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, honey, smoked paprika, cayenne pepper, and salt and pepper to taste.
- Add the shrimp to the marinade, ensuring they are thoroughly coated, cover and refrigerate for 30 minutes.
- Preheat the grill to medium-high heat, around 375°F to 400°F.
- Thread the marinated shrimp onto skewers, leaving space between each piece.
- Grill the shrimp for 2-3 minutes on each side until they turn pink and opaque.
- Remove from the grill and serve with extra lemon juice, alongside a salad or dipping sauce.
