For the Marinade
  • 2 cups Seedless Watermelon Provides natural sweetness and moisture.

  • 4 cups Ripe Watermelon Cubes
  • 1/2 cup Brown Sugar
  • 2 ounces Tomato Paste Use 2 ounces if using a tube.
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Tamari Sauce Can be substituted with soy sauce.

Method
 

Step-by-Step Instructions
  1. Puree 2 cups of seedless watermelon in a blender until smooth. Strain through a sieve into a bowl. Combine watermelon juice with lime juice, salt, and pepper for marinade.
  2. Mix brown sugar, garlic powder, smoked paprika, onion powder, salt, and pepper in a bowl to create the dry rub.
  3. Blend 4 cups watermelon cubes in a blender, strain to obtain juice. Heat juice in a saucepan, add brown sugar, then mix in tomato paste, balsamic vinegar, tamari sauce, and garlic. Simmer for 10-15 minutes.
  4. Preheat grill to 350°F. Remove membrane from ribs, marinate ribs in the watermelon marinade for 15-60 minutes.
  5. Shake off marinade and apply dry rub all over the ribs. Grill on the indirect heat side for 1 hour, flipping halfway and cooking for an additional 30 minutes.
  6. Move ribs to direct heat for a few minutes to char. Optionally brush with BBQ sauce during this stage. Remove ribs and slather with more sauce before serving.

Notes

Remove the membrane from ribs for better flavor absorption and allow ribs to rest for 5-10 minutes after grilling.
