Creamy Mixture
  • 1 cup Milk Heavy cream can be used for a richer taste.
  • 4 tablespoons Butter Use cubed and cold for best melting.
Seasoning & Garnish
  • 1 teaspoon Kosher Salt Adjust to your taste.
  • 1/2 teaspoon Black Pepper Freshly ground is preferred.
  • 2 tablespoons Chives Optional garnish.

Preparation Steps
  1. Preheat your grill to medium heat, about 350°F (180°C). Grease a cast iron skillet with cooking spray or butter.
  2. In a large bowl, combine thinly sliced red potatoes with kosher salt, black pepper, and smoked paprika, ensuring even coating.
  3. Layer the sliced onions in the greased skillet, followed by the seasoned potato slices.
  4. Pour milk over the layered potatoes and onions, and scatter cold cubed butter on top.
  5. Cover the skillet tightly with aluminum foil and place it on the preheated grill. Cook for about 45 minutes.
  6. Carefully remove the foil and return the skillet to the grill. Cook for an additional 10 minutes to achieve a golden top.
  7. Remove the skillet from the grill, let it cool slightly, and garnish with chopped chives before serving.
